    A whole packer is one cut hiding two muscles that cook together but carve apart. The flat is the lean half: even thickness, tight grain, neat slices. The point — butchers call it the deckle — rides on top like a fat-marbled pillow, and its grain runs roughly opposite to the flat’s. Over both sits the fat cap, the hard white layer you will level to about ¼ inch before cooking.
